?The fresh rain in these last couple of days washed away the layer of thick gray smoke that had taken up residence in our sky. ?? ⁣ ⁣ Yesterday we went for a long hike and I took several very, very deep breaths…each one felt more cleansing than the first. After developing some serious cabin fever, movement felt delicious.⁣ ⁣ This blood orange and radicchio salad feels equally restorative. Radicchio is characteristically bitter, so pairing it with sweet blood orange segments and a tangy honey dressing is ??⁣ ⁣ I may be pushing 30, but I’ll never stop playing with my food ? Lack of sun exposure can really bring our spirits down between the months of October and January. If you're suffering from seasonnal affective disorder, please remember to nourish yourself well. The link between a stagnant body full of build up and an unhappy mind have been demonstrated. Its hard for our body to function with too much toxins and it also affects our moods. Forget about processed and fried food even if you crave them and turn to nutrient rich foods filled with vitamins, minerals, good fat and enzymes. I don’t know about you guys, but I need to reset with healthy food after this holiday weekend of feasting…this vegan RED LENTIL SOUP is a great place to start ??✨ will make you feel soo dang good, and it’s so incredibly delicious. It has a mostly smooth texture with a little bit of bite, and the tang of the lemon juice added at the end balances out the richness perfectly. [???] Stuffed Butternut Squash!? Are you already tired of pumpkin recipes? Im not so maybe one more delicious recipe!? Couscous & bean stuffing in roasted butternut squash! So good and easy dinner!!? Happy Monday!? • Recipe for 2: 1 small-medium butternut squash Oil Salt About 3 dl (one cup) cooked couscous About 1 dl (1/2 cup) cooked kidney beans About 1 dl (1/2 cup) sweet corn About 1 dl (1/2 cup) coconut milk Dried cranberries Garlic powder 1 tsp sriracha Pepper Lemon juice • Preheat the oven to 210c (425f) degrees, line baking sheet with parchment paper. Cut the butternut squash in half and scrape out the seeds and drizzle each half with olive oil and salt. Turn the squash face down and roast until it is tender and completely cooked through, about 50 minutes. Mix cooked couscous, beans, corn, cranberries, cream and spices in sauce pan and warm it up. Carve the center of the butternut squash, chop it smaller and mix into the stuffing. Adjust the flavour if needed and fill the butternut squash halves. • Täytetyt myskikurpitsan puolikkaat!? Ootko jo kyllästyny kurpitsa ohjeisiin? Mä en oo eli ehkä yks ohje vielä!? Paahdettu myskikurpitsan puolikas couscous & paputäytteellä!? Ihanaa Maanantaita!? Resepti kahdelle: 1 pieni-keskikokoinen myskikurpitsa Öljyä Suolaa 3 dl kypsää couscousia 1 dl kypsiä kidneypapuja 1 dl kookosmaitoa 1 dl maissia Kuivattuja karpaloita Valkosipulijauhetta 1 tl srirachaa Pippuria Sitruunanmehua • Uuni 210c. Puolita kurpitsa ja lusikoi siemenet pois. Aseta kurpitsan puolikkaat leivinpaperille uunipellille ja sivele öljyllä ja mausta suolalla. Käännä sileä puoli alaspäin ja paahda uunissa 50min. Sekoita kattilassa couscous, pavut, maissi, karpalot, kerma ja mausteet ja lämmitä. Koverra kurpitsan puolikkaita keskeltä ja pilko koverrettu osa ja lisää täytteen sekaan.
