Couscous & bean stuffing in roasted butternut squash! So good and easy dinner!!? Happy Monday!? • Recipe for 2: 1 small-medium butternut squash Oil Salt About 3 dl (one cup) cooked couscous About 1 dl (1/2 cup) cooked kidney beans About 1 dl (1/2 cup) sweet corn About 1 dl (1/2 cup) coconut milk Dried cranberries Garlic powder 1 tsp sriracha Pepper Lemon juice • Preheat the oven to 210c (425f) degrees, line baking sheet with parchment paper. Cut the butternut squash in half and scrape out the seeds and drizzle each half with olive oil and salt. Turn the squash face down and roast until it is tender and completely cooked through, about 50 minutes. Mix cooked couscous, beans, corn, cranberries, cream and spices in sauce pan and warm it up. Carve the center of the butternut squash, chop it smaller and mix into the stuffing. Adjust the flavour if needed and fill the butternut squash halves. • Täytetyt myskikurpitsan puolikkaat!? Resepti kahdelle: 1 pieni-keskikokoinen myskikurpitsa Öljyä Suolaa 3 dl kypsää couscousia 1 dl kypsiä kidneypapuja 1 dl kookosmaitoa 1 dl maissia Kuivattuja karpaloita Valkosipulijauhetta 1 tl srirachaa Pippuria Sitruunanmehua • Uuni 210c. Puolita kurpitsa ja lusikoi siemenet pois. Aseta kurpitsan puolikkaat leivinpaperille uunipellille ja sivele öljyllä ja mausta suolalla. Käännä sileä puoli alaspäin ja paahda uunissa 50min. Sekoita kattilassa couscous, pavut, maissi, karpalot, kerma ja mausteet ja lämmitä. Koverra kurpitsan puolikkaita keskeltä ja pilko koverrettu osa ja lisää täytteen sekaan.
